Soup from the can?




Last week I fell so sick. Never had I felt this way before. Feverish, chills and lethargic all the way from Mon right up to Fri. On Thursday I came down with such a terrible migraine that I did not have the energy to prepare dinner. So, I decided to open up a can of M&S minestrone soup.




It was pretty good, I would say. I could hardly taste much salt in it. Well, it contained all sorts of vegetables and pasta as well. I heat it up and served it with some toast bread with butter. The princess of the house loved it. So, bye bye Heinz soup...I think I will stick with M&S for a while now for emergency quick fix.


Nuggets, burgers and the lot

Tania loves nuggets and burgers. And I hate feeding her the processed stuff. You know those frozen nuggets - the colour is enough to put me off. Burger patties are the same - you just do not know what went in. So, today we decided we will make some of her favourite stuff from the scratch (well, almost).

This is how the finishing product looks like.



Ingredients :



Minced chicken (or beef)
Salt / Pepper
Mixed herbs
Cheese - mozarella
Bread crumbs
Egg
All purpose flour




How to :



Beat the egg, mix it with the minced meat. Then add all the other ingredients - u can add some chopped parsley and onions/garlic as well. Form these into burger patties, meatballs and finger sticks. For meatballs and finger sticks, roll them onto some bread crumbs to cover them.



U can store them in the freezer. What I normally do is individually wrap them in clingwrap and store in a container in the freezer. Very handy over the week, just grab them out of the freezer, thaw and cook. Voila - Chicken burger, spaghetti meatball or chicken fingers with salad on the side :)

My nuggets cooking in the oven. This was Tania's dinner. I served these with some raisin and apple salad on the side.



To make nuggets, use chicken breast fillet - chopped into cubes and marinate with salt/pepper and some cumin powder. Dip them in egg batter and then cover with some flour and bread crumbs.















I swear by this flour.
