A fish dish for the kids

This is a very easy recipe, and the kids could help with the cooking too.

What we need:

1 white fish fillet

1 tbsp plain flour

Butter (20g)

1 slice of bread

Milk (125 ml)

Mozarella cheese

Soft cheese (50g) - can be plain or can be flavoured with garlic

A cup of peas, a cup of cherry tomatoes

Sausages (sliced)

Steps :

1. Clean the fish fillet. Prepare the baking dish and oil around the dish.

2. Melt the butter, tear the bread and drop it into the melted butter. Let the bread soak the butter up.

3. Next, mix the soft cheese with plain flour and stir in the milk. Mix all together till it is nice and smooth.

4. Pour the peas into the mixture.
5. Then, cut the fish fillet and line them in the baking dish. Next add the tomatoes (squash them a bit) and sausages.

6. Pour the cheese and pea mixture over the fish, and top with bread crumbs and mozarella cheese.

7. Bake for 25 minutes at 180 - 200 celcius.
8. Dish out and serve with some steamed brocolli or carrots if you like.

2nd baby on the way...

This was slightly more than a week ago. Yes, I am preggers...about 8 weeks now.

How do I feel? Horrible for now...nauseous, vomitting on most days, exhausted till I can't drag myself out of the bed every morning, constantly having dry mouth & throat and not to mention the metallic sourish taste in my mouth which doesn't seemed to go away! And I am constantly moody and have no mood to do anything else.

Worse than my first? Definitely. I can't wait for the first trimester to be over! 4 more weeks!

Soup from the can?

Last week I fell so sick. Never had I felt this way before. Feverish, chills and lethargic all the way from Mon right up to Fri. On Thursday I came down with such a terrible migraine that I did not have the energy to prepare dinner. So, I decided to open up a can of M&S minestrone soup.

It was pretty good, I would say. I could hardly taste much salt in it. Well, it contained all sorts of vegetables and pasta as well. I heat it up and served it with some toast bread with butter. The princess of the house loved it. So, bye bye Heinz soup...I think I will stick with M&S for a while now for emergency quick fix.

Nuggets, burgers and the lot

Tania loves nuggets and burgers. And I hate feeding her the processed stuff. You know those frozen nuggets - the colour is enough to put me off. Burger patties are the same - you just do not know what went in. So, today we decided we will make some of her favourite stuff from the scratch (well, almost).

This is how the finishing product looks like.

Ingredients :

Minced chicken (or beef)
Salt / Pepper
Mixed herbs
Cheese - mozarella
Bread crumbs
Egg
All purpose flour

How to :

Beat the egg, mix it with the minced meat. Then add all the other ingredients - u can add some chopped parsley and onions/garlic as well. Form these into burger patties, meatballs and finger sticks. For meatballs and finger sticks, roll them onto some bread crumbs to cover them.

U can store them in the freezer. What I normally do is individually wrap them in clingwrap and store in a container in the freezer. Very handy over the week, just grab them out of the freezer, thaw and cook. Voila - Chicken burger, spaghetti meatball or chicken fingers with salad on the side :)

My nuggets cooking in the oven. This was Tania's dinner. I served these with some raisin and apple salad on the side.

To make nuggets, use chicken breast fillet - chopped into cubes and marinate with salt/pepper and some cumin powder. Dip them in egg batter and then cover with some flour and bread crumbs.

I swear by this flour.

Happy trying :)

A much deserved break

We recently decided that we needed a quick getaway, so we booked ourselves (including the lil' one) into Tanjong Jara Resort. Drive was long, took us about 5 hours, but oh my, the place was heavenly! People / service was good, food was great and the whole place was just sooo nice.

Here are some photos of our lunch and dinner.

A place which is worth every dollar!

Start of a new year

What a long absence. I have been neglecting my blog when the main reason for setting this blog up is to keep track of the musings and happenings in my life...

X'mas came and gone, so did New Year. And we are now in the midst of CNY celebration. Did not go back home to KK this year...everybody came down this year. We spent the first day at The Dusun, which is in Seremban.

It is basically like going back to kampung. This is the house we stayed in - Emas House. Kampung-style house but with modern amenities. Will upload more photos and write more updates on this soon.
Back to work for now!
